PEPPER JACK CHEESE CRACKERS

One of the easiest snacks I make for my family are cheese crackers. They are simple, fast and great to grab on the go. I thought it would be fun to make a slightly grown up version by giving it a spicy kick with some Pepper Jack Cheese. Although I would like to add, my oldest daughter loves these and asked for them to be spicier next time. She must get her love of spicy food from me. They are a slightly elevated cheese cracker that you can easily entertain with too, but you will be surprised at how easy they are to put together.

You probably already have all the ingredients you need. The fun part is that you can cut them out into all different shapes. This time around, I used a pizza cutter to make long strips for dipping and I love the rustic look it creates. They look beautiful standing up in a bowl or scattered around a plate. For some extra texture and flavor, I sprayed the tops with a little water and sprinkled some seeds over them.









PEPPER JACK CHEESE CRACKERS

(makes 4-6 servings)


INGREDIENTS


  • 4 oz Pepper Jack Cheese, shredded

  • 4 tablespoons unsalted butter, cold

  • 1 teaspoon salt

  • 1 cup all-purpose flour

  • 2 tablespoons water, cold

  • sea salt, poppyseeds, sesame seeds, for topping


METHOD


In a medium mixing bowl, stir together the flour, salt and cheese. Grate the cold butter over the flour mixture and mix until it resembles coarse sand. Add the water 1 tablespoon at a time and mix until it comes together. Divide the dough into 2 discs and wrap in plastic wrap. Chill for 30 minutes. Preheat oven to 350 degrees and line 2 sheet pans with parchment paper. Roll out each disc on a lightly floured surface to about an 1/8 inch thickness. Using a pizza cutter or sharp knife, cut into long strips or squares. Lightly spray the tops with water and sprinkle toppings over the top if desired. Bake until golden brown and crunchy, 18-20 minutes. Cool completely before serving


TIPS

  • The unbaked dough can be stored in the fridge for up to a week

  • Use your favorite topping to add even more flavor

  • Feel free to use more cheese for an even spicier kick

  • Store leftovers in an airtight container
