TRIPLE CHOCOLATE PEPPERMINT COOKIES

Is there any better combination than chocolate and peppermint? Before you answer that question, do yourself a favor and make a batch of these Triple Chocolate Peppermint Cookies. These cookies are the most requested cookies during the holiday season. Although I'm on a mission to make them a year round treat.



The flavor combination of chocolate and peppermint is so special because it is decadent and refreshing at the same time. The recipe calls for 3 types of chocolate: cocoa, dark chocolate and white chocolate chips. You may be on the fence about white chocolate but it adds a nice sweetness and richness. I also like to melt some of the white chocolate for a decorative drizzle.







TRIPLE CHOCOLATE PEPPERMINT COOKIES

(makes 2 dozen)


INGREDIENTS


  • 2 1/2 cups all purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 3/4 cup dark cocoa powder

  • 2 sticks unsalted butter, room temp

  • 1 cup sugar

  • 1 cup brown sugar

  • 2 eggs, room temp

  • 1 teaspoon vanilla extract

  • 1 teaspoon peppermint extract

  • 1/2 cup dark chocolate chips

  • 1/2 cup white chocolate chips

  • 1 cup peppermint crushed candy, and more for decoration

  • melted white chocolate, for decoration


METHOD



Preheat oven to 350F degrees. Line 2 baking sheets with parchment paper. In a mixing bowl, whisk the flour, baking soda, salt and cocoa together. In a bowl of a stand mixer, cream butter and sugars together with a paddle attachment until light and fluffy. Add the eggs, one at a time followed by the vanilla and peppermint. Add the flour mixture and mix on low until a smooth dough is formed. Add in the chocolate chips and peppermint crushed candy. Using a small ice cream scoop, portion out the dough onto the prepared baking sheets. Bake for 12-14 minutes and let cool completely before decorating. Before serving, drizzle some melted chocolate over each cookie followed by a sprinkle of the peppermint crushed candy.
